For Ess-a-bagel, you really have to go early in the morning, like 6:30-ish for a hot bagel. Although, I can only speak for the one by StuyTown, not Midtown. I have only had Absolute Bagels once, but I believe out of the three I mentioned, they shoud have the best consistency regardless of time of purchase and travels best based on the texture that I got.
