You want to maximise damage and ap for direct combat while still keeping them alive. Heavy armor, hands down. Thralls don’t dodge so this should be a given. Maximize dr while having a set that boosts str and/or vit.

T1 use weaker weapons and armor, T2 and T3 use better equipment and better effects for crafting and breaking. As for why Thralls don't have weapons when placed.
