Restoring the Empire requires the following duchies : Thrace and Athens (already owned), Antioch (Syria), Alexandria (Egypt), Croatia (Croatia), Tunis …Click on that and at the top right of the tab it press 'Other Faiths'. When you're in that tab uncheck the 'Only (your religion group) Faiths' box. It will then show all religions in the world, dead or not. Scroll down until you see Hellenism, click on that and then the information is displayed there.Click your kingdom title icon to pull up the title page, at the top it should show you the empire title that kingdom belongs to. There should be a create empire button there. Alternatively you can change the map filter to empires. Which made me think. There's so many interesting mechanics in 3, yet they're under utilised.
